Preheat over 350 degree
2 frozen fish loaves (Raskins or Benzys at Albertson’s in Mercer Is. or QFC in Univ. Village)
1 10 oz can of tomato sauce
1 small sweet onion, diced
2 stalks of celery, diced
1 large carrot, diced
1 large jalapeño pepper, diced
3 tablespoons olive oil
2 tablespoons sugar
½ tsp salt
Dash of pepper
Sauté onion, celery, carrot and pepper in olive oil at medium heat until they soften. Add in tomato sauce, sugar, salt, and pepper. Cook on low heat for 25 minutes. Cool and pour over totally unwrapped fish loaves. Add in ¼ cup water to pan before baking. Covered and bake for 1 ½ -hour.
