Serves 15
4 Russet potatoes
3 Yukon gold potatoes
1 small sweet onion
5 eggs
1/3 cup oil & 2 tablespoons
1 ¼ teaspoon salt
½ teaspoon coarse black pepper
Preheat oven to 350 degree
1. Peel and cube potatoes.
2. Place in bowl of cold water.
3. Dice onions in food processor and place in mixing bowl
4. Take handfuls of potatoes out of water, dry on clean towel and dice in batches food processor coarsely
5. Add potatoes to onion mixture.
6. When all potatoes are finished
7. Add 1/3 cup oil
8. Place 9 x 13 pan in oven with 2 tablespoons oil to heat
9. Add eggs, salt and pepper (NOTE Do not mix until all ingredients are in bowl)
10. Mix gently until all potatoes are covered
11. Take pan out of oven and place potato mixture in and bake for 1 hour.
12. Allow to cool 5 minutes. Serve hot.
